
I made this little dish for lunch a while back, and it was just shy of scrumptious. I was inspired by

Smitten Kitchen. Follow that? As Alice said, the recipe "is a perfect use for
TJ's cubed butternut squash, prepared lentils and goat cheese (get the Silver Goat kind) and [she] would go ahead and add the arugula too." I'll do that next time, and I'll make sure to refrigerate those lentils. Whoops! If I make those slight adjustments, I'm sure this easy, healthy lunch will then taste just as good as it looks.

Heidi did you put dressing on it? A squeeze of lemon and a drizzle of olive oil, and maybe a little sprinkle of cilantro or parsley would help liven things up I think. Sorry to have led you astray! :)
